1. PROGRAM OVERVIEW
The terms documented information was introduced as part of the common High-Level Structure (HLS) and common terms for Management System Standards (MSS). Documented information can be used to communicate a message, provide evidence
of what was planned has actually been done, or knowledge sharing.

According to ISO 22000 Standard Clause 7.5 The organization’s FSMS shall include:
a) documented information required by the standard (ISO 22000);
b) documented information determined by the organization as being necessary for
the effectiveness of the FSMS;
c) documented information and food safety requirements required by statutory,
regulatory authorities and customers.

In this training participants shall gain knowledge on how to manage documented information for FSMS according to ISO 22000 and HACCP (Malaysia Standard)

The training includes 15-MINUTES assessment as evaluation of training effectiveness.

3. CONTENTS OUTLINE
 Introduction to documented information
 Requirements of documented information for HACCP and FSMS
 Creating documented information (FSMS Manual, SOP PRP, HACCP Plan documents)
 Creating records relevant to FSMS (forms, checklists, reports, schedule/ plans and
risk assessment table)
 Creating Master List of Documents and Records
 Control of externally provided documented information (SDS, Specifications, COA,
Contracts, Certificates and other Document of Conformance)
 Control of Document Changes
 Record retention – filing for hard copy records and retaining digital data and records
including backups
 Storage and maintaining integrity of FSMS documented information

4. LEARNING OUTCOMES
On successful completion of the training, participants shall be able to:
 Understand the requirements of documented information for HACCP and Food
 Creating and updating documented information such as identification and
description, formatting, review and approval of documented information
 Control documented information effectively to support continual improvement of
company’s FSMS
 Manage effectively the relevant FSMS documented information such as FSMS
Manual, SOP, external document and records
